A European Combo - Swiss Chard and Italian Peppers - Our Recipe of the Day- Oct 20th

Another Quick, Simple, Delicious, side dish. Swiss Chard is a member of the beetroot family. It has a stalk that is not too tough and sauté's well. It's leaves are reminiscent of spinach leaves but slightly hardier when cooked.


Italian peppers are in the bell pepper family but are longer and more narrow with a waxier skin. Known as Friggitelli, they are not spicy. Don't confuse them with their look alike cousin, the slightly spicy pepperoncini.

 
 

Ingredients

  • 2-4 Italian Peppers, Thinly Sliced

  • 1/2 Yellow Onion, Thinly Sliced

  • 1 Bunch Chard, Chopped Medium

  • 2-4 Cloves Garlic, Smashed

  • 2 T Olive Oil

  • Kosher Salt and Ground White Pepper, To Taste

 

Directions

  • Heat oil in Cast Iron Skillet over Medium Heat

  • Slice Peppers and Onions

  • Add Peppers and Onio to Skillet, Stir Frequently

  • Chop Chard, including Leaves

  • Add Chard to Skillet, Stir Frequently

  • Add Garlic to Skillet and Stir

  • Simmer 5 Minutes and Serve

**Season after adding Peppers and Onions. Season again after adding Chard
