Looking to switch up your tired, old, regular veggie rotation? Consider Broccolini! No, your kids probably won't like this more than other veggies. Sorry. The name is too similar to Broccoli to fool them. But this is an easy, versatile vegetable to prepare. And this "starter" recipe couldn't be simpler.

This hybrid vegetable is a cross between Chinese Kale and typical broccoli. Somehow the finished product is better than the sum of each of its parts. It looks similar to broccoli but has a smaller head and a longer stalk. The stalk is also more tender than a typical broccoli stalk.

Ingredients

  • 2-3 T Olive Oil

  • 1-2 Bunches Fresh Broccolini, Stems trimmed

  • 2-3 Cloves Garlic, Minced

  • Kosher Salt, to Taste

Directions

  • Heat oil in cast iron skillet over medium heat

  • Add Broccolini to skillet

  • Season with Kosher Salt

  • Cook for 5 -10 minutes turning a few times

  • Add garlic to skillet

  • Cook 5 minutes or until stalks are slightly charred

  • Serve

  • Watch kids turn up their noses

**If you want it slightly more tender pop broccolini in microwave for 30 seconds to a minute before adding to skillet

**You can play around with other ingredients. Fresh lemon, Red Pepper Flakes, etc
