You just can't beat corn pudding. A great compliment to barbecue or any southern meal. But it hits just right with Thanksgiving too.
There is a BBQ chain with 67 locations across the country who makes THEE best corn pudding. Hands down. My son has been known to ask if we can stop and pickup a quart. Nothing else. Just the corn pudding.
However, we don't review or do write ups on large chain bars or restaurants here at The Food Road Less Traveled. We leave corporate chain world coverage to others. That would be your Food Road Heavily Traveled. 😆
So here is a quick, simple, delicious recipe for you. Enjoy!
Ingredients
1/2 cup butter, cut into pieces
1 (15.25 ounce) can whole kernel corn
1 (15 ounce) can creamed corn
1 (8.5 ounce) package cornbread mix
1 (8 ounce) container sour cream (Optional)
Directions
Preheat the oven to 350 degrees F (175 degrees C ).
Put butter into a 2-quart casserole dish and place into the oven to melt while preheating.
When butter melts, remove the casserole dish from the oven.
Mix both types of corn, cornbread mix, and sour cream into melted butter until well combined.
Bake in the preheated oven for about 30 minutes.
